Forkbeard. A greyish or brownish fish with reddish fins from Spanish waters. It is usually fried, but this must be done quickly as it does not keep well.
Garfish or saury. These are two very similar fish, both of which are good to eat. They are striking, beaked, marine fish up to 60 cm (2 ft) long, with a backbone which turns bright green, almost mauve, on cooking and a delicious flavour, found on most European coasts.
"Reddened." A hot, piquant pomegranate and walnut dip with chillis, garlic and breadcrumbs, good with cooked meats and kebabs. I have seen recipes which include many nuts such as cashews, almonds, pistachios, pine nuts and hazels.
