Smoked or roasted cracked green wheat, a traditional way of having access to a wheat crop before it had ripened. The flavour is smoky and it goes well with sweet corn and sweet vegetables generally. It originated in and appears in the cuisine of the Middle East.

Bitter apple. Colocynth. A type of gourd about the size of an orange. It has bitter, spongy flesh and is used as a laxative. It is drought resistant so grows well in sandy places.
"Sea pig." Triggerfish. A brightly coloured Mediterranean fish, more common in the southern Mediterranean than than the northern. It must be skinned before cooking as the skin is very tough.
A soft to semihard cheese made with sheep or goat's milk. It has a white paste and is made with raw, whole milk. The curds are heated to boiling point in whey and then drained and kept in salted whey. Affinage, in the salted whey, is usually 40 days. This cheese is eaten widely throughout the Middle East.
