ศรีราชา(sriracha)

[Thai]

A red chili sauce made with chillis, vinegar, garlic, sugar and salt. In Thailand it is used as a dipping sauce, particularly for sea food. Sriracha is marketed in the US by Huy Fong foods and where it is often referred to as "Rooster Sauce", or "Cock Sauce," derived from the picture of the cockerel on its label. Here sriracha is used as a general hot sauce where ketchup might have been used in the past and is added to a wide range of dishes, from pizza, to sushi rolls and teriyaki, from buffalo wings to fried eggs and French fries.
