Speculoos are biscuits (US: cookies) made with cinnamon, ginger and cloves. They were traditionally eaten in Belgium during the Christmas period but are now more generally available. In Belgium they are made in moulds decorated with Christmas scenes, windmills, scenes from mystery plays, and may be coated in chocolate or white icing.
