Rösti is a dish, or accompaniment, of grated potato formed into a cake and fried, originally from the Canton of Berne. Traditionally it was a breakfast dish, fried in pork fat and consumed with milky coffee – more milk than coffee. This is enjoying a revival in restaurants.
