Rasskäss

A semihard, full-flavoured cow’s milk cheese made in north eastern Switzerland for over 700 years. It has a hard orange-brown rind, washed in white wine or cider, a firm yellow interior with a few small holes. It can be used in cooking to replace Gruyère. It is similar to Appenzeller but made with skimmed milk and has a darker colour and sharper taste.
