Quinoa is a golden or black farinaceous seed, not a grain, with a high protein content and used like rice or couscous. The plant originated in South America, on the Pacific slopes of the Andes, but can be grown in more temperate climates. Boil for 10-15 minutes in 3 times as much water. Couscous can be made from it.
