The Japanese pine mushroom or matsutake is found in autumn (US: fall), is a delicious and sought-after fungus that grows in the pine forests of Japan. It is a mushroom of the same family as wood blewitt. It has a unique and distinctive flavour and a slightly crisp texture. It grows out of timber. (If gathering mushrooms you must be absolutely certain what you have before you eat them as many are very poisonous.)
