masa harina

/MAH-sah hah-REE-nah/
[Spanish]

Corn flour treated with lime, used in the making of tortillas and tamales. The flour is made from a maize with larger kernels than we are generally accustomed to in the West. It is finer than cornmeal but not as fine as cornflour (US: corn starch).
