Kohl-rabi is a turnip-like brassica which may be anything from purple to green in colour. It is a delicately flavoured, sweet vegetable with a round, swollen stem and crisp texture. This makes it very good for salads, when lightly blanched, and stir fries, or thinly sliced and braised. To prepare, wash well to get any soil out of the nooks and crannies, then cut off the stalk and peel it. Slice as required.
