芹菜(kín tsài)

[Mandarin_and_Pinyin]

This Chinese celery has long green stems with green shiny leaves with a jagged margin and looking a little like flat-leaf parsley. It prefers cool temperatures for growth. The stalks and leaves can be used in stews, stir-fried dishes or salads. Considered indispensable for Chinese cooking, this celery has a stronger flavour than Western celery, so less is needed. It keeps its flavour when dried.
