Black Spanish pig. A breed of pig, small and brown with floppy ears, which runs free in the forests of holm oak, particularly around Salamanca. They get plenty of exercise, keeping the meat lean and, as yearlings, consume huge quantities of acorns daily, their fat becoming monounsaturated. The renowned Ibérico ham is produced from these animals. Hams are lightly salted and hung in cool rooms for two years.
