Round fritters or hollow puffs often served as a tapas. They can be sweet, using apricots or savoury, including versions made with salt cod, cheese, ham, shellfish, brains or celery. They are made by dipping a morsel of these foods into pancake batter and deep frying. In Mexico they are often made with sugar and aniseed or cinnamon and hot chocolate or atole.
