Yeast. Used in bread-making, yeast is a raising agent. Dried yeast is activated by soaking in warm water until it bubbles. Quick, easy-bake or fast-action yeasts are also dried but they do not required soaking. If dried yeast is stated in a recipe, the same quantity of fast-acting yeast can be substituted. Half as much dried should be used as fresh yeast.
