A large white dried heirloom bean with distinctive maroon markings, or, alternatively, maroon with white markings. It has a sweet, fresh flavour and smooth texture. Steve Sando of Rancho Gordo describes these as 'somewhere between a pinto and a black bean' and 'very creamy'.
