A soft curd cheese made with goat or sheep's milk, similar to ricotta but denser and dryer. It has a spreadable paste and is rindless. This Cypriot cheese is sweet and flavoured with a little thyme. It is sold in required quantities from a sort of soft loaf weighing around 10 kg.
