Queso de Roncal Navarra is a popular sheep's milk cheese in northern Spain, from Navarre. It is hand-pressed, salted and smoked. This processing gives its rind a leathery appearance. Made from sheep’s milk, it is hard and has a sharp taste (PDO).
A hard, strong, crumbly and dry, salty cheese made from skimmed cow or goat's milk, pressed and matured for up to 8 months and coated with chilli powder. It has a sharp flavour. The paste has a close-grained texture with a few small holes. It is similar to Feta when fresh and to Parmesan cheese when dried.
"Fresh cheese." Fromage frais. A soft fresh curd cheese often used in place of cream. May also be cottage cheese.
