Fenugreek. The seeds impart a distinctive, smoky flavour to dishes. Both the leaves and seeds are used, in the same way as they are for coriander (US: cilantro).
Water amaranth or sessile joyweed. A type of amaranth which grows vigorously, providing nutritious greens. Use only tender new shoots as old leaves can leave a bitter taste in the mouth.
Golden Sixthread Tesselfish. A silvery estuarine fish which shoals around reefs, rather similar in appearance to a grey mullet. It is a bottom-feeder, feeding on small crustaceans and bottom-living organisms, adding to its own flavour. It is sold in Bengal and Bangladesh fresh, frozen, dried and salted.
