Pollack. A member of the cod family found in the eastern and north Atlantic and weighing around 1 kg (2 lb). It is dark green above and has a protruding lower jaw. They have rather grey, flaky flesh and are often salted and dried or pickled and are also commonly used for making imitation shellfish foods. Treat is as you would cod. I have heard that Somerville and Ross, in the Irish RM, describe pollock as tasting like cotton-wool with pins in it.
Sweetcorn (US: corn). Maize. A tall grass native to America. Available fresh, on the cob, or with the kernels stripped from the cob, tinned or frozen.
Alose. Allis shad. A freshwater shad, from a family of white, migratory fish. The shad is a bony, tasty, oily fish similar to herring, which travels up rivers in spring and is found in deep lakes. In France it is found in the Gironde where it is often grilled over vine shoots or stuffed with sorrel, and in the Loire, where it may be stuffed with beurre blanc. The roe is a great delicacy and shad is also used raw in sushi. Members of the family include Allis shad (Alosa alosa) and the smaller twaite shad or gizzard shad (Alosa fallax).
