Crucian carp. A carp of silvery gold colour, similar to bream in appearance.
Snipe, of which there are several kinds. The finest part of the bird is reputed to be the brain. Best in autumn (US: fall), they are usually roasted.
Fly agaric. A type of mushroom, the classic red with white spots. Famous for its psychoactive hallucinogenic properties this is the magic mushroom and is actually poisonous to eat.
Boiled brisket of short ribs of beef from a dish of boiled beef and vegetables and broth (pot-au-feu), as opposed to the broth itself (bouillon). It is served with coarse salt and boiled potatoes, the vegetables from the broth and horseradish or other appropriate sauce.
The fairy ring mushroom with white flesh and a pleasing taste. These dry well and have good flavour but must be cooked first.
