A fresh, soft, spreadable cream cheese made with cow's milk. Quark is the German for 'curd' where this cheese has been known for a very long time. It is moist white and comes in tubs. Quark may be made with whole milk, skimmed, semi-skimmer of even buttermilk, which will affect the fat content. It is made with vegetable rennet so is suitable for vegetarians. Quark should have a tangy flavour, almost lemony in quality and is like a cross between yoghurt and fromage frais.
