Hops. The male flower shoots are boiled, tossed in butter or sometimes cooked in cream. Flowers are decorative and hops are most famously used in making beers.
A syrup made from almonds and used for sweetening and flavouring cocktails and desserts. When mixed with pastis it is called mauresque.
Garfish or saury. These are two very similar fish, both of which are good to eat. They are striking, beaked, marine fish up to 60 cm (2 ft) long, with a backbone which turns bright green, almost mauve, on cooking and a delicious flavour, found on most European coasts.
The huchen or Danube salmon (Hucho hucho) is a species of freshwater fish in the salmon family and is severely threatened with extinction. There is now a considerable commercial effort to produce huchen fry to re-introduce the species into the wild. This requires the adults being caught just before spawning and kept in special tanks. Fry are released in appropriate places once they have reached 4 to 10 cm.
