Lemon sole. A yellowish-brown, thin, translucent flatfish which is not a true sole, though it has the same blunted shape.
A name in Flemish-speaking west Flanders for cougnou, a traditional Christmas yeast cake with raisins from Flanders, also available on St Martin’s day. Traditionally it is made in the shape of the baby Jesus. It is known by a variety of names throughout France and Belgium and decorated in different ways.
Waterzoi is a creamy chicken or fish stew from Flanders. Traditionally it was made with fish, and there is some suggestion that a shortage of fish led to it being made with chicken instead.
