Banana flowers are the male flowers that are the precursors of a hand of bananas. They are compact, fat, pointed and red to purple in colour and are used in Indian and South East Asia in the say way as globe artichokes.
In the centre of the trunk of the banana plant is a pith which is sliced and soaked for several hours for use in cooking. It is quite a hazardous exercise as it should not be allowed to touch either skin or clothing.
The banana leaf is, not surprisingly, the large leaf of the banana plant. They are sufficiently pliable for use as a wrapping for foods that are to be baked or steamed or used as plates and are used throughout Central and South America and in South East Asia. If you are using them, cut out the stiff central spine and then soak them for a while in boiling water.
A yellow paste tomato with thin lacy leaves. It is a prolific, determinate variety producing fruits 7.5-10 cm (3-4 inches) long and 2.5-5 cm (1-2 inches) in diameter, yellow in colour with longitudinal stripes that turn from light green to orange yellow as they ripen in mid season. The flesh is yellow, dry, sweet and meaty with few seeds. This tomato is good for salads or sauces.
Oysters that have been farmed may sometimes be misshapen, more long and thin and uniform in width than the classic fan shape of the rock oyster. These are sometimes called banana oysters (in France oreilles de lapin) and should be avoided. They are used commercially in prepared stews and soups in the United States.
Curuba. An elongated member of the passion fruit family with yellow skin and salmon-pink pulp. It is inclined to slight tartness.
A yellowish-beige translucent king prawn with no obvious spots or bands, fished in the waters of tropical northern Australia. There are two types, white, with white legs and redleg with red legs. They are found around 25 cm (9½") long. The flesh is sweet and quite soft.
