Bee balm. A herb of the mint family used in salads and cordials, perfumery, particularly in eau de Cologne and in the making of Oswego or Earl Gray tea. Bergamote is also a variety of pear, a type of barley sugar and a citrus fruit.
Ambarella. A fruit with many names, including Otaheite apple, Tahitian quince, Jamaica plum, golden apple and so on. Wherever it is found it is referred to by its local name. The fruit is plum-shaped, sweet-sour and eaten at all stages of ripeness. It has a spiny seed and it should be removed carefully. If it is in its unripe form it is peeled and sliced and dipped in chilli powder and salt. It is also used in chutneys. As it ripens the pale flesh becomes yellow to orange and becomes sweeter, slightly resembling pineapple in flavour.
A large golden-yellow eating gage. Reputedly the best of all, a gage-like plum. The yellow transparent flesh is moderately, but not outstandingly sweet. It is also good for bottling and freezing.
A determinate variety of early tomato producing medium-sized fruit of very good flavour and colour.
Bottom round. A sub-primal cut of the beef primal round. The bottom round is a lean cut from the hindquarter, which is often cut into steaks but may be left whole and braised or roasted. Cut of beef from the hindquarter adjacent to the shin, down the inside of the leg, being the lower quarter of the round.
An oven thermometer is a way of ensuring what the temperature of an oven is. As an oven ages the thermostats often becomes innacurate.
Overnight bread is made with less powerful yeast and the bread is raised overnight. It is occasionally thought that "overnight" bread means that it was made yesterday and sold today, making it rather unpopular. This is far from being the case. Bread which is raised overnight has a complex flavour, wonderful aroma and has good keeping qualities. Hobbs House Bakery in Nailsworth makes an overnight bread called the Sherston. The loaf was named after the village in which the grandfather of the present baker lived, using his recipe.
