A large variety of fruit-flavoured chilli which is good for stuffing, and which has become popular for its high yield, disease resistance and general reliability. It grows to between 15-23 cms (6-9") in length and 4-5 cm (1½-2") wide. It ripens to red when it becomes sweeter. Heat = 4.

Huss. This species of dogfish has a grey-brown skin with quite pronounced dark spots. Because of its relative similarity to a shark the coarse skin is usually removed by fishmongers. These fish grow to about 80 cm (32 inches) in length. The flesh is white or pinkish with a firm texture and good flavour. It is boneless. It is also commonly known as the spotted dogfish or nursehound or, in some places, as rock salmon or rock eel. Spurdog, smoothound and tope are all sold as huss. It is an excellent addition to soups because of its texture. It feeds on shellfish which flavours its own firm, white flesh.

A nut is the hard edible kernel of any of several species, including walnuts, Brazil nuts, cashews, almonds and the like. The default will differ from place to place. In France, Spain and Italy the defauls is walnuts, so assume walnuts unless otherwise informed. When I was a child, nuts meant the hazel nuts which grew on the bushes and small trees all over the village, following on from the catkins of spring. Some things which are not actually nuts are called by the name, so that a pulse, the peanut (US: ground nut) is one of the best known ‘nuts’.

Nutmeg is the kernel of a fruit similar to an apricot, and is wrapped in a scarlet leathery lace or aril of mace. Nutmeg is a hard kernel which needs to be grated.
