long coriander

Long coriander or stinkweed is a herb widely used in seasoning and marinating in the Caribbean. It is also used extensively in Thailand, India, Vietnam, and other parts of Asia as a culinary herb. This variety of coriander dries well, retaining good color and flavor, making it valuable in the dried herb industry. It is sometimes used as a substitute for cilantro, but it has a much stronger taste.

long-grain rice

Long-grain rice is mainly Oryza sativa Indica, and all those varieties of rice, like Basmati, where the grains are approximately four times as long as they are wide. Grains are around 7-9 mm (up to ¼ “) long. People are inclined to think that only short-grain, sticky rice is used in China, Japan and much of South East Asia, but in fact long-grain rice is just as popular for use with certain dishes.

Long Green chile

Anaheim chillis are long, sweet, mild to hot chillis, suitable for grilling. They are often grilled and then used in salads, or for stuffing with cheese. They are often bright yellowish-green but there is a red variety known as the colourado chilli and a green known as the California Green. Anaheim chillis are rarely dried but are usually used fresh. They are native to Kenya but are now grown in the United States.

Long Island oyster

Atlantic rock oyster. A variety of oyster up to 15 cm (6") in length found on the American side of the Atlantic. Unlike many oysters this is usually cooked, served on the half shell. This is because it is quite a fatty oyster, particularly when large, which is improved by cooking. All down the eastern seaboard the Atlantic oyster is called after the area in which it is found, e.g. the Long Island oyster, Chesapeake Bay oysters and so on. The best known is probably the bluepoint.
