Fried aubergine (US: eggplant) is generally sliced, coated in flour and fried.
A dish from the southern States of green tomatoes, sliced and salted and left to drain, patter dry, coated in seasoned flour and then shallow fried until browned. They are served with a dressing which includes buttermilk, herbs, garlic, lemon and mayonnaise.
Fried potatoes may refer to chips (US: French fries) but is more likely to mean potatoes sliced quite thinly, but not as thinly as crisps (US: potato chips) and fried. These usually do not end up as crisp potatoes.
