A type of meringue made with cornflour (US: corn starch) mixed with meringue Suisse, that is meringue which has half the sugar incorporated during beating and the other half folded in. It is then cooked faster than normal for a shorter time, resulting in a glossy meringue with a crisp outside and a soft, sticky interior. It is used for pavlovas.
An excellent medium-sized, mainly red eating apple, sweet, juicy and aromatic, with skin that is yellow flushed and striped with crimson. It was raised in Worcester County in Massachusetts and is recorded in 1844. It is quite soft and, when fresh, perfumed and sweet. It is a mid- to late-season apple, harvested from late September in South-East England, is stored and is at its best between October and December. In the United States it is more commonly known as Mother.
A smooth, runny mustard made from the milder white seeds only and with sugar. Its bright yellow colour comes from turmeric. The best known is French's and it is famously squeezed over hot dogs.
Atlantic rock oyster. A variety of oyster up to 15 cm (6") in length found on the American side of the Atlantic. Unlike many oysters this is usually cooked, served on the half shell. This is because it is quite a fatty oyster, particularly when large, which is improved by cooking. All down the eastern seaboard the Atlantic oyster is called after the area in which it is found, e.g. the Long Island oyster, Chesapeake Bay oysters and so on. The best known is probably the bluepoint.
A game bird related to the quail but slightly larger.
A variety of persimmon about 4 cm (1½ inches) in diameter with a yellowish-pink or orange to red skin. It is a very sweet persimmon.
Large prawns related to king prawns, up to 15 cm (6 inches) in length, fished south of the Carolinas. They come in brown, pink and white.
