The clam bake, a famous dish of New England, consists of steamed soft shell clams served whole on the half shell, the meats removed at the table, dipped in the broth in which they were cooked and then in melted butter.
An American businessman who lived from 1886-1956. He visited Labrador in 1920, during which journey he noticed that fish remained edible after catching if they were exposed to the cold air and frozen. He subsequently developed a system for freezing foods rapidly. This failed, but his name was bought and remains famous in the slightly changed form of Bird's Eye.
A variety of broccoli which starts producing in April and goes on until the end of May. More commonly the English name for the red wines of Bordeaux.
When butter is melted the fat, water and solids separate. Clarified butter is the purified butterfat left when then water and solids are removed. Butter so treated is less likely to burn during any cooking process.
American lobster. A variety of lobster found in the waters of New England with a brown to blue-black shell, with particularly large claws. It has firm white flesh with good, sweet flavour. I ate this variety in the Lobster House in Gloucester, Massachusetts in the 60s - a pilgrimage I made when I was living in the United States as I was born in Gloucester, England. They come in three sizes. Jumbo, at 1 kg in weight (2 lb); large at 680-900 g (1.5-2 lb), quarter at 560-680 g (1.25-1.5 lb), chicken at 450 g (1 lb) and chix at less than 450 g (1 lb).
