buffalo cod

Lingcod. This is not a ling but a member of the greenling family fished in the Pacific along North American coasts, weighing 2.3-9 kg (5-20 lb). It has mottled brown to bluish-green skin with green, brown or terra spots which have a circle around them of orange or light blue. The flesh lightens from greenish-blue to white during cooking.

A berry which grows in the Midwestern states of the United States. It is a small red or yellow berry growing on a wild, bushy tree. It is used for preserves or to make a tart sauce to accompany buffalo meat.

This buffalo fish is a carp-like fish which can grow to a large size. It is found commonly in rivers and freshwater lakes in and around South Asia and South-East Asia. It is a highly regarded fish eaten on auspicious occasions. The roe of rohu is also considered as a delicacy by Oriyas and Bengalis by whom it is deep fried and served hot as an appetizer. It is also stuffed inside pointed gourd to make potoler dolma which is considered a delicacy. Rohu is also served deep fried in mustard oil, as kalia which is a rich gravy made of concoction of spices and deeply browned onions and tok, where the fish is cooked in a tangy sauce made of tamarind and mustard.

This buffalo fish is a sweet, white, lean freshwater fish with coarse flesh; a type of sucker with dull brown to olive skin. It is similar to carp and very versatile and plentiful in the Great Lakes and Mississippi valley. It is good smoked.

buffalo mozzarella

Mozzarella is a mild, white fresh cheese made by a process called pasta filata. It is often made with cow's milk but the most sought-after form is made from buffalo milk. Many of the water buffalo in Italy were slaughtered by the retreating Germans and it took some time for more buffalo to be acquired to replace them. There is a reviving interest in mozzarella di bufala as the herds increase.

bug

May refer to either the Balmain bug or the Moreton Bay bug, a type of sand lobster found around the coasts of Australia mainly off the eastern seaboard of Queensland. Sand lobsters are any of a variety of small crustaceans bearing a resemblance to lobsters and which bury themselves in sand or mud during the day. There are many of them, including bay bug, bay lobster, shovel-nosed lobster and rudder-nosed lobster which is similar to a slipper lobster. Moreton Bay bugs and Balmain bugs are available commercially. Moreton Bay bugs are slightly more triangular than the Balmain bug, which also have their eyes placed very centrally, while those of the Moreton Bay bug are placed right out on the margin of the carapace. They are available at around 25 cm (10") in length. Balmain bugs are said to be sligthly inferior in flavour to Moreton Bay bugs, which are also a little larger in size.
