The big-scale atherine is a type of atherine similar to the sand smelt. A marine fish, usually deep-fried, it is a small, silvery fish similar to the argentine. When tiny it is treated in the same way as whitebait. This fish grows up to 12 cm.

It is often served in a burger bun with gherkins (US: dill pickle), mustard and a slice of cheese, a sort of unconstructed cheese burger. Loosemeats is always presented wrapped in wax paper. Loosemeats goes by many names, including tavern, Big T, Charlie Boy, Tastee or Maid-Rite.

Bilberries are various berries, including wild cranberry, the small indigo, blue-black fruit of a plant similar to the American blueberry but found commonly in northern Europe. These have more flavour than blueberries and are smaller, but are otherwise very similar, with the same silvery bloom. They are good for pies and jams (US: jellies). They are known by many names in English including bilberry, blaeberry, whinberry and whortleberry. Don't wash any soft fruit until it is about to be used or it is likely to rot. European names for bilberries are often incorrectly translated as blueberries.

The thin end of the shell of an oyster. For an oyster opener, there are five terms to know about an oyster: Beak, hinge, bill, adductor, cupped. The beak is the pointed part of any oyster. Right behind it, the hinge is found. The adductor is a powerful muscle that holds the oyster shut. The bill is the broad flat end opposite the beak. The cupped portion is the "more bellied" shell half of the two oyster shell halves (called valves). That cupped shell is always facing down when opening any oyster.
