Bearberry. A small, hard, red berry, rather similar to the cranberry, with a waxy coating and very tart flavour. It is produced on low growing vines in bogs in the north of North America and is used extensively in sauces with poultry.
Beestings. Colostrum. The first liquid obtained from the mammary gland of an animal after it has given birth. It is particularly rich and creamy and clots when heated. It is used for desserts and puddings. It is sometimes used to make cheeses but is often kept by farmers to help new born animals which are not thriving.
A hard, crisp biscuit from the American South made by beating the dough together for as much as half an hour. Originated in the 1800s.
