Avgholemono. A thickened egg and lemon sauce or soup. If a soup it has added chicken stock and rice.

The yolks of hard boiled eggs mashed with onion, cinnamon, oil and parsley, rolled into balls and put back into the egg whites. They are served with yoghurt sauce or vinaigrette.
